Which prime lens is recommended for a Sony mirrorless camera?

So I finally pulled the trigger on a Sony A7IV after saving up for like a year and now I am stuck in the classic prime lens rabbit hole. I live in Seattle so most of my shooting is gonna be in pretty low light or under grey skies and I really want something that stays on the camera 90% of the time for street stuff and some environmental portraits of my friends.

Ive been doing a ton of research and looking at the Sony 35mm f1.8 because it seems super practical and light which is great for when I walk around the city all day. But then I keep reading these forum posts where people swear by the Sigma 35mm f1.4 DG DN Art saying the rendering and bokeh are just on another level compared to the Sony. The thing is I have a trip to Kyoto coming up in about three months and I really dont want to be lugging around a huge heavy lens if I can help it but I also dont want to regret not having that extra stop of light for night street shots or those moody alleyway photos.

Then there is the Zeiss 55mm f1.8 which some people call a legend because of the contrast and pop it gives images but I am worried that 55mm might be a bit too tight for narrow streets or if I am sitting across from someone at a restaurant. My budget is pretty firm at under 1000 dollars so the fancy G Master lenses are definitely out of reach right now which makes the choice even harder. I also looked at the 40mm f2.5 G lens because it is tiny and would be amazing for travel but is f2.5 actually enough for low light? I feel like I am just going in circles at this point and every time I think I have decided I read another review that changes my mind...

If you guys had to pick just one prime to live on your Sony body for a mix of street and lifestyle which one would you actually commit to?
