What is the best all-around lens for Sony mirrorless cameras?

So I just bought this Sony camera—it’s an a7iii I think—because everyone said it’s the best but I am completely in over my head and honestly panicking a little bit. I’m leaving for my trip to Italy in literally five days and I just realized I dont actually have a lens that works for everything. I spent like two hours looking at websites and there are so many numbers and letters like f/2.8 and G-Master and I have no clue what any of it means. I just want one single lens that I can put on the camera and never take off because I dont want to be that person fumbling with gear in the middle of a crowded street in Rome. My budget is around $900 maybe a bit more if it’s really going to make my photos look professional with those blurry backgrounds everyone likes. I want to take pictures of big cathedrals but also my family at dinner when it’s kinda dark inside. Is there a lens that actually does all that or am I asking for something impossible? I really dont want to carry a heavy bag around all day either. Please help me before I just give up and use my iPhone...

Ive used the Tamron 28-75mm f/2.8 Di III VXD G2 on three trips with my a7iii and its a decent option because f/2.8 handles dim restaurants and provides those blurry backgrounds.
