My old setup died and I have a huge wedding gig in two weeks so Im panicking. I saw Adorama bundles but dont need the extra lenses and B&H's edu discount doesnt apply to me anymore.

Im stuck with a $2100 budget and need it fast... where are people actually finding the best discounts for just the body?

Unfortunately, finding a brand new Sony Alpha 7 IV 33MP Full-Frame Mirrorless Body for under $2100 is nearly impossible at the moment through the major retailers. I tried hunting for similar deals recently and it was a letdown... the pricing is strictly controlled by Sony. Most of the bundles you mentioned are not as good as expected because they just pad the price with generic SD cards and flimsy tripods that you will never actually use in a professional setting. To stay within that $2100 budget, you really have two paths. The first is Greentoe. Basically, you put in a bid--try $2050 or $2100--and authorized dealers who want to move stock will quietly accept it. This is how many pros bypass the official retail price while still getting a full warranty. My second recommendation is the used market. I have bought from MPB Sony Alpha 7 IV Used Condition several times, and their inspection process is quite methodical. It is definitely better than risking a random seller when you have a wedding in two weeks. It is honestly disappointing that Sony doesnt offer more direct body-only discounts for enthusiasts who dont need the kit glass. If you go the used route, just make sure to check the shutter count. Anything under 20k is basically brand new for these sensors. Just dont wait too long tho because shipping from private sellers can be slow and unreliable compared to a dedicated warehouse... you need that camera in hand for testing before the big day.
